1323279 Adherent coating on foods DCA FOOD INDUSTRIES INC 26 April 1972 [7 June 1971] 19264/72 Heading A2B A continuous adherent edible coating is formed on food pieces by providing a gel forming material on the surface of the piece, for example by dipping into a solution thereof or by forming the piece from a slurry comprising comminuted food particles and the gel-forming material, exposing the piece to a gelation agent, for example a solution containing alkaline earth metal ions, whereby a substantially continuous skin enveloping said piece is formed there being a residue of the gelation agent remaining on the surface of the skin, and thereafter coating the piece, with a fluid batter containing gel-forming material whereby an addition gel structure is formed. The product may be breaded. The product may be fried or frozen for later frying. |
