Cheese moulding - with incorporation of heterogeneous elements

A mass of moulded cheese, composed of heterogeneous elements 1 part of which appears in the form of inclusions not mixed with the cheese is prepd. by injecting the elements for forming such inclusions into the flowing mass of cheese base in the moulding section preceding the nozzle(s) from which it is discharged into the receiver(s). Process is for making e.g. gorgonzola have inclusions of moulding bread and herbs.
