Processing boiled meat - to remove fat and cut up compressed blocks in single operation

Processing device used consists of a filling hopper connected at its base by filling orifices to several parallel compressing cylinders; these have a filter under press. at one end and are surrounded by a collector for fat. A piston is moved along the cylinders by a hydraulic jack while the open end of the cylinder bears on the external wall of a hollow cylinder which turns around its longitudinal axis when actuated by another jack. In use boiled meat is introduced into the hopper; with the hollow cylinder in the position in which it blocks the open end of the compression cylinder the piston advances and the meat is compressed. The greater part of the fat is expelled through the filter and with further press. The meat is compressed into a hard block. The hollow cylinder then turns so that the block is pressed through an opening against the blades of a cutting device. The pieces are evacuated via another hole in the hollow cylinder. It is possible automatically in a single operation, to remove the fat and transform the meat by cutting up the blocks formed by compression; no subsequent chemical treatment is necessary.
