Bakery dough raising room heating and humidification - using heated inclined water gutter sections in zigzag arrangement

The dough raising chamber is heated and humidified by a heated inclined gutter which is arranged along one wall and contains sections of alternate left- and right-hand inclinations. As water runs down from one section to the next and out through the outflow, it is heated, pref. by electric heating elements underneath the sections, and the water vapour is entrained by circulating air. There is no time lag in the response; when the water is turned off, the humidification ceases within a min. of time. The heaters for the gutters serve at the same as heaters for the temp. in the dough raising room.
