A machine for peeling and cutting up fruit or vegetable in block form with skin on one side only uses a roller to press the block against a cutting grille which advances tangentially to the roller, in the same direction and at the same speed as the roller. A blade separates and lifts skin away on one side of the grille as cut prod. is pushed through to the other side of the grille. The grille has sharpened cutting edges which ensure that cut prod. pieces are not in any way crushed or bruished. The cutting edge of the skin removal blade faces the discharge line of the roller and the blade can be fixed or rotary. The grille can be formed in the surface of a rotary table or in the circumference of a drum. Alternatively, the grille can be carried on a table which reciprocates beneath the pressure roller.
