1495484 Frozen potato product INSTITUUT VOOR BEWARING EN VERWERKING VAN LANDBOUWPRODUKTEN 2 June 1976 [3 June 1975] 22812/76 Heading A2B A frozen potato product is made in a manner similar to 1265179 but the frying step is not essential for if a fried cake is required the cuttings are formed into the cake before the frying step. As described the steps of the present invention comprise peeling and cutting up potatoes, heating in water until the internal temp. is 60-80‹C, cooling to less than 25‹C, heating in water or steam at a temp. of 95-130‹C for a time, t, such that o t/Tdt is 300-900‹C minutes, cooling and comminuting the potato and then either (a) freezing them whilst keeping the cuttings in motion (b) lightly frying the cuttings followed by freezing or (c) forming the cuttings into a cake which is lightly fried and then frozen. Fat or other foodstuffs may be added to the cuttings prior to the freezing steps. The cuttings are preferably cooled in a fluidised bed and sealed from air before or after freezing. |
