Controlled sludge removal from wort - involves cooling to predetermined temp. to remove all coarse sludge and some of the cold sludge

Brewing method in which the wort after the necessary boiling is cooled to the pitching temp. in a single process. After this has been accomplished the course sludge and a controlled amt. of the cold sludge is removed simultaneously. This is carried out in a special settling out vessel and the wort is then fermented in a conventional manner after adding yeast. Pref. for wort in which a top fermenting yeast is used the cooling temp. is 10 degrees C plus-or-minus 1 degrees C and for a bottom fermenting yeast is 22 degrees C plus-or-minus 1 degree C. The wort is kept in the settling out tank for 120-140 mins. and pref. 35-40% of the cold sludge is removed. A relatively low cost high quality beer is obtd.
