摘要 <p>Brewing method in which the wort after the necessary boiling is cooled to the pitching temp. in a single process. After this has been accomplished the course sludge and a controlled amt. of the cold sludge is removed simultaneously. This is carried out in a special settling out vessel and the wort is then fermented in a conventional manner after adding yeast. Pref. for wort in which a top fermenting yeast is used the cooling temp. is 10 degrees C plus-or-minus 1 degrees C and for a bottom fermenting yeast is 22 degrees C plus-or-minus 1 degree C. The wort is kept in the settling out tank for 120-140 mins. and pref. 35-40% of the cold sludge is removed. A relatively low cost high quality beer is obtd.</p>
