FIELD: food industry.SUBSTANCE: invention relates to production of kvass. Method envisages recipe components preparation, crushing of rye crumbs, cutting girasol-sunflower, its drying in a microwave field till the residual humidity of about 20 % at a microwave filed power providing warming of girasol-sunflower inside the bits till the temperature of 80-90 °C during at least 1 hour, frying and grinding, pouring the listed components with boiling water, maintaining during approximately 3 hours, separation of phases, addition to the liquid phase of sugar, cumin and baker's yeast , fermentation and separation of phases.EFFECT: method enables to reduce duration of technological process, stabilize colour and increase stability of foam in finished product.1 cl |
