<p>Parent patent described the prepn. of protein-enriched starchy foods or feedstuffs by aerobic culture of an amylolytic fungus using the finely divided starch food as substrate and recovering the fungal protein. In this patent of addition the divided substrate is a cooked starch flour with a sedimentation time 30 min. The starch is pref. obtd. by steam cooking or boiling in a starchy substrate, freezing the starch prod. and drying and pulverising. Pref. starchy material is whole cassava tubers which are steamed for 20 min. at 100 degrees C, or cassava pieces cooked in water at 90 degrees C for 10-15 min. Cooking gives a particulate prod. rich in soluble starch and dextrin and which is very suitable for the process since it rapidly resorbs water and is non-agglomerating. The protein enriched foodstuff contains, after 30 hrs. incubation, a prod. contg. >=17% protein with good organoleptic props.</p> |
