A process for preparing mixtures containing ammonium lactate from aqueous milk processing residues or mixtures containing lactic acid and/or lactose and lactic acid formers, e.g. lactic acid whey, sweet whey buttermilk, comprises adding, to the processing residues or mixtures, ammonia at a rate such that pH is kept below 6.0 and, after the desired amount of ammonium lactate has been formed, adding ammonia to the mixture to give a pH of not greater than 6.5. The process has low production costs and produces high yields. The product of the process is used as an animal feedstuff or a constituent in an animal feedstuff composition. Lactic and fermentation of lactose present may be effected during ammonia treatment. |
