1414869 Heat-treating foodstuffs BURGER EISENWERKE AG 20 March 1973 [25 March 1972] 13458/73 Heading A2D [Also in Division F4] An apparatus for heat-treating foodstuffs comprises a chamber, means for circulating hot air over foodstuff disposed within the chamber, adjusting means for varying the rate of air flow and control means for controlling the adjusting means, the control means being operable to pre-select an air flow chosen from a plurality of desired constant air flows and at least one programmed varying air flow. An apparatus of the above type is shown in Fig. 1 and comprises a housing 1 provided with a motor-driven fan 3 and air guide plates 5. The rotational speed of the fan and thus the rate of flow of air, which is heated by electrical heating elements 8, is regulated by means of pre-selector switch 6. This switch is operable to select one of a plurality of desired constant flows or a programmed varying flow. There may also be provided a control unit for controlling the flow-adjusting means in accordance with the result of a comparison between the desired rate of air flow as selected by the control means with the actual rate of air flow. The apparatus is particularly applicable to the baking, roasting or thawing of foodstuffs. |
