PURPOSE:To prepare fermentation mixture of sake, miso, wine, etc., using a medium containing an effective component of distillers' solubles. CONSTITUTION:Clear filtrate obtained by the centrifugal separation or filtration of distillers' solubles or its concentrate, obtained from the distillation residue of whisky, etc., or a fraction of the filtrate containing low molecular and high molecular weight components, is added to a medium for the fermentation of sake, miso, etc., and fermentation mixture is prepared therefrom. |
