摘要 <p>The process using an industrial enzyme of the rennet type by adsorption on an insoluble organic support comprises fixing the rennet in soln. on a macroporous adsorbing synthetic resin of food quality, the average pore dia. of which is above 500 angstroms. The prod. is used in cheese mfr. to treat milk continuously in a fixed bed column or in a fluidised bed. The process is simple giving a prod. which is both stable in enzymatic activity and is satisfactory for food use. The average pore dia. is pref. >=1,300 angstroms. Pref. resins are cation exchange and strongly acid such as styrene/dirinyl benzene capolymer, specifically with 20% divinyl benzene and SO3-as the functional gp.; or a phenalic resin.</p>
