An aq. protein extract of plant origin is used in recovering non-denatured proteins having purity >80%, by a process comprising (a) contacting a protein soln. with >1 ion exchanger resin or with SiO2 or Al2O3 having specific surface 5-150m2/g, pore dia. 25-250nm., pore vol. 0.4-4ml/g. and exchanger capacity 2m.equiv/g., (b) absorbing and then (c) washing out the protein. Protein solns. or spray- or freeze-dried powders obtd. can be used as proteolytic activity-inhibiting proteins or enzymes, in paper industry or in food for human and animal consumption. The protein solns. contain only traces of contaminants. Dried proteins are obtd. as white or light beige powders having a neutral taste and smell.
