PURPOSE:To prepare the titled product having excellent taste, flavor, nutritive value, and palatability, high digestibility and masticability, and long-term preservability, by maintaining cooled unpolished rice to a specific temperature to glutenize a part thereof, and freezing the treated rice after forming to a desired form. CONSTITUTION:100pts.wt. of unpolished rice is immersed in water, drained, added with 140-150pts.wt. of water, and cooked in a pressure cooker. The cooked rice is kneaded at 70-100 deg.C until about 50-90% of the rice is crushed and glutenized. The product thus prepared is composed of unpolished rice particles 2 having original shape and semibroken unpolished rice particles 3, and partly glutenized rice 1 bonding the particles 2 and 3 to a lump. The product is formed to a desired form, and rapidly frozen to obtain the solidified final product. |
