PURPOSE:To prepare L-aspartic acid efficiently, by reacting a culture of a microorganism belonging to the genus Brevibacterium, and having the resistance to alphaamino-n-butyric acid with fumaric acid. CONSTITUTION:A microorganism, e.g. Brevibacterium flavum MJ-233-AB-41 (FERM-P No.3812), which belongs to the genus Brevibacterium, and has the resistance to alpha-amino-n-butyric acid, is incubated aerobically in a culture medium containing 1-5vol% ethanol at pH5-10 and 20-40 deg.C for 2-8 days to give a culture containing aspartase having a high activity. Ammonia or an ammonium salt is added to adjust the pH of an aqueous solution of a fumarate to about 10, and the solution is reacted with the culture to give L-aspartic acid. |
