A knife with a preferred cutting direction is described, the cutting efficiency and wearing resistance of which are increased by a special arrangement for grinding the cutting edge. Grinding is arranged as shown in Figure 1 in such a way that it is carried out at an angle of 15 DEG to 60 DEG with respect to the cutting edge, the opening of the angle pointing in a direction which is approximately opposite to the preferred cutting direction. This improved arrangement is preferably to be used for grinding knives used in the household. <IMAGE>
