PURPOSE:To provide noodle having a strong springiness, by adding an ashed bone meal to a mixing raw material. CONSTITUTION:0.05-5%, based on wheat flour, ashed bone meal prepared by firing a bone of a domestic animal or fowl over a direct fire, carbonizing the attached organic materials, e.g. meat, heat-treating the resultant bone meal at about 500-2,000 deg.C for several hours-several tens of hours, and pulverizing the heat-treated bone meal, is added to a raw material, e.g. the wheat flour, water, common salt, egg white or starch, and the resultant mixture is thoroughly kneaded, rolled, kneaded and sheeted and cut according to the conventional method to prepare the aimed noodles. |
