PURPOSE:To obtain boiled defatted soybeans having improved digestibility in high operating efficiency and to prepare the titled soybeans useful as a raw material for fermentation, by adding lecithin to defatted soybeans so that they have >=0.3wt% lecithin content. CONSTITUTION:Defatted soybeans are blended with >=about 0.1wt% lecithin (soybean lecithin, colza lecithin, maize lecithin, etc.) so that the lecithin content in the soybeans made about 0.3-2wt%. Namely, about 0.3-2wt% lecithin is added to defatted soybeans having <=0.3wt% lecithin, and about 0.2-0.3wt% lecithin is added to defatted soybean having >=about 0.3wt% lecithin content. |
