PURPOSE:To obtain inexpensively purified tamarind gum having improved quality, by solubilizing selectively protein and fat from fine powder of tamarind gum. CONSTITUTION:Fine powder of seed of Tamarindus indica Linn is suspended in water or a mixed solution of water and a water-soluble organic solvent to make 0.5-20wt% suspension, and it is subjected to enzymatic reaction in 2-13pH at 20-60 deg.C. After the enzymatic reaction is over, the residue is separated and recovered by a centrifugal separator, etc. The residue is dried to give tamarind gum soluble in hot water. While the tamarind gum separated and recovered after enzymatic treatment is suspended water to make 1-20wt% suspension, heated at >=60 deg.C, tamarind gum is dissolved and dried to give tamarind gum soluble in cold water. Acidic protease, neutral protease or alkali protease is used as protease. |
