The invention relates to a product and a process for the preparation of a dough mixture, composed of flour, for bread, quiche, pizza bases etc., where this product is to have a relatively high keeping quality without preservatives. According to the invention it is therefore proposed that at first only a partial baking process is carried out, that the product is then packaged airtight and that a sterilisation is then carried out. The product is then to be finish-baked prior to consumption.
