摘要 <p>PURPOSE:To produce SHOCHU (low-class distilled spirit) of class OTSU (distilled in a primitive distillation still) having mellow flavor, particularly SHOCHU of class OTSU made from green tea, by mixing SHOCHU lees with green tea powder, and carrying out the enzymolysis of the resultant mixture. CONSTITUTION:Usually about 2-4pts. green tea powder is added to 100pts. SHOCHU (low-class distilled spirit) lees, and mixed therewith thoroughly under stirring. The resultant mixture is then allowed to stand at room temperature for about 12-16hr to carry out the enzymolysis by enzymes contained in the whole SHOCHU lees. The resultant enzymolysis product is then distilled and dried.</p>
