The installation comprises a heat-transfer liquid heating unit 30, and a thermally insulated tunnel 1 which is divided into a series of compartments 8 to 13 which are separated by doors 2, 3, 16 to 20. Containers 6a and 6b loaded with hams, are moved, suspended from a rail 4 traversing the series of compartments. The first compartment 8 comprises a soaking tank 26 connected to the unit 30, in which each entering container is soaked. The second compartment 9 is empty of heat-transfer fluid. The following compartments 10 to 13 comprise, on their floors, vessels of liquid 32, 34 to 36 provided with heating means 33. The temperatures ensured by the heating means 33 increase in parallel with the core temperature of the hams. Each container is a parallelepiped which is perforated over all of its faces except for the front face or the rear face, and the doors of the tunnel are of the flexible-shutter type.
