The invention relates to a device for obtaining fillets of fish without bones. On the basis of a filleting machine which has a belly-filleting and back-filleting tool and a severing tool for releasing the strips of flesh on both sides of the spinal column in the tail region and processes the fish which is conveyed tail-first, the arrangement of a bone removal tool between the two aforementioned tools is described, an insertion cutter being provided between the circular cutters of the bone removal tool for separating the strip of flesh enclosing the bones immediately after it is cut free.
