The oil-bearing grains are introduced into an extruder 1. At the exit 12 of the extruder 1, a compact product is obtained in the form of a roll (sausage) which is cut up in order to obtain granules suitable for withstanding subsequent treatments. The oil is extracted from these granules by treatment in a solvent and they are ground in order to obtain the flour. Use for obtaining a food-grade, oil-free flour which is rich in proteins and low in cellulose.
