A instant sweet and sour pork is prepd. by (a) coating meat, e.g. pork, fish meat, beef, with starch powder, soysauce and egg york, (b) frying the coated meat for 2-3 min. in the 180-200 deg.C edible oil for standing for 1-2 min. in atmos., (c) re-frying it for 1-2 min., drying, dehydrating to obtain the re-fryed meat contg. 15 wt.% or less moisture, (d) fast-freezing the meat, sterilizing with UV light, packing and sterilizing at high temp. to obtain the fryed meat for sweet and sour pork, (e) packing the prepd. fryed meat with sterilized packed sauce, re-packing and fast-freezing to obtain the final product. The obtd. sweet and sour pork is preserved for a long time. |
