摘要 |
A vinegar is prepd. by (a) fermenting Acetobacter aceti in the medium, (b) mixing the fermented broth with 2-4 % sodium alginate soln., (c) dropping the mixed soln. into the calcium chloride soln. by passing through a needle (diameter = 0.02-0.05 cm) to obtain the Acetibacter acetic immobilized bead, and (d) adding 10-30 % bead into the medium and continous-fermenting to obtain the final product.
