A food product preparation process, comprising the steps of: blending a food product in a large kettle (26, 28) at a temperature less than 54.4 DEG C (130 DEG F); filling the blended food product from the large kettle (26, 28) into a plurality of containers (22, 24) and sealing the filled containers (22, 24); preheating the sealed containers (22, 24) and their food products in a preheat vessel (34); and passing the preheated containers (22, 24) through a hydrostatic sterilizer (20) and thereby sterilizing the food products therein. <IMAGE> |
