The invention relates to an appartus for the service-life-increasing heat treatment of germ-containing products, in particular to an apparatus for the pasteurisation or ultra-high temperature preservation of milk. The apparatus comprises one or more heat exchangers (3.2, 3.3) and a cooler (3.1), which form the heat-exchanger unit. The heat exchangers and the cooler are connected via a raw-product line (4) and a raw-product container (1). Raw product and cooling water and finished product flow through the heat-exchanger unit in indirect counter-current. According to the invention, the heat-exchanger unit is provided with a device which is of relatively simple construction and protects against heat-treated product being mixed with non-treated product, in the case of which, in the standstill period of the heat-treatment apparatus, the finished-product line (8.1) which passes through the heat exchangers (3.2, 3.3) and the cooler (3.1) is shut off from the other line section (4, 8, 11, 16) by the shut-off valves (10, 12) and, by using a pressure-maintenance-checking device (13, 14, 15) provided downstream of the heat-exchanger unit (3), the leak-tightness of the heat exchangers (3.2, 3.3) and of the cooler (3.1) is checked. <IMAGE>
