Once peeled, cleaned and cut into pieces 4, the potatoes are placed in a container 6 containing oil 5 to cover them. The container is then hermetically closed and placed in an autoclave 8, being subjected for a period of from 5 to 30 minutes to a temperature of approximately 80 to 125 degree C in order to sterilize and pre-fry the pieces 4 in a single operation.
