The oven has a gas burner for its single source of heat and for supplying a steam generator. The burner (3) is of a cylindrical type with a mesh, lying inside a closed cylinder. The oven operates in five different cooking modes, attaining a saturated vapour below 100 degrees C, and attaining a high humidity at up to 250 degrees C. The steam operation is combined with the convection of hot air with the assistance of a central fan. The steam generating pipes (21) form a circuit surrounding the fan, and the combustion fumes heat them superficially. An atomiser (25) disperses a flow of heated water into the fume/water heat exchanger pipes.
