The invention concerns a novel method of preparing optically active amino acids and amino acid derivatives of general formula (I), in which *, X and R<1> to R<4> have the meanings given in the description. High yields of the enantiomerically-pure compounds of formula (I) are obtained from commercial (-)-menthol or (+)-menthol. The method is particularly suitable for preparing sterically demanding amino acids and amino acid derivatives.
