摘要 A method for obtaining protein concentrate for nutrition purposes from potato juice, which involves fractional thermal coagulation and the heating of each separated fraction to a temperature higher than the boiling point in a period from 10 minutes to 1 hour. Each separated and heated fraction is blown through with air or live steam from 5 minutes to 3 hours and further rinsed with alcohol with a concentration from 5 to 35 percent and with water; further, it is centrifuged or dried and packed in metal foil or plastic foil.
