The method uses a cooling fluid which is fed from a water feed network and flows from a cooler so that it is at a lower temperature than the network water. The cooker can have a cooking vessel with a casing a a steam container. The space between the cooking vessel and the steam vessel in the upper half of the filling level of the water bath has a heated steam holder. Water from the water bath can be in heat exchange with the cooling vessel. The water cooler (17) can be selectively connected to the cooling medium flow with a different temperature.
