<p>Means (35) are provided to adjust the speed of the turbulence inducing fans (21, 32) in a tunnel freezer (1) in accordance with the product to be cooled and/or frozen. In one embodiment the tunnel freezer (1) comprises four sections (2,3,4,5) each of which is maintained at a specific temperature by its own temperature sensor (26) and its own supply of cryogenic fluid (27,29,30). Each section (2,3,4,5) is provided with one or more turbulence inducing fans (21,32) the speed of which is adjusted in accordance with the product to be cooled and/or frozen.
