The process for obtaining fatty esters of diacetyltartaric acid can be carried out either in a single stage, starting with diacetyltartaric acid and commercial fatty esters, or in two stages, involving first obtaining the reactants: the diacetyltartaric acid by acetylation of tartaric acid and the fatty esters by esterification of the free acids. The process includes another three complementary stages of purification of the diacetyltartaric acid obtained, recovery of the catalyst used in obtaining the end product and purification of the end product by extraction. As raw materials, use is made of the free or acetylated acid and monoglycerides of fatty acids or alternatively obtained by direct esterification of the free fatty acids. As biocatalysts, use is made of the lipases from the fungal species Mucor miehei and Candida antarctica. The best yields were obtained using the latter immobilized in a polymeric adsorbent with a pore diameter of 180 angstroms and a specific surface area of 95 m2/g at a temperature of 75degreeC and pressure of 1 mmHg. The biocatalyst is recovered and the diacetyltartaric acid monoglyceride ester (DATEM) is purified by extraction.
