<p>A method for cooking potato sticks, characterized in that it comprises the following steps: a step in which a steam pressure cooker (1) is loaded with a dose or specific amount of raw potato sticks, whereby said pressure cooker is pre-heated to a temperature ranging from 200-250 °C; a step in which the pressure cooker is hermetically closed; a step in which the pressure cooker (F) is subjected to a specific degree of pressurization by heating and evaporating the water from the potato sticks, whereby said degree of pressurization ranges from 4.5 to 5.5 bars and is maintained during a specific cooking time of approximately one minute; a step in which a forced flux of vapor which is overheated inside the pressure cooker is created at a speed of 10-20 m/s.</p> |
