摘要 PURPOSE: A method for preparing a functional rice using the extract of safflower seeds is provided by coating rice with the water-soluble and fat-soluble extract of safflower seeds which contains essential fat acid 75% and has an effect to reduce cholesterol. CONSTITUTION: A method for preparing a functional rice using the extract of safflower seeds is characterized in extracting firstly fat-soluble ingredients in hexane and water-soluble ingredients in water separately, coating rice with water-soluble extract, and then coating with fat-soluble extract. The mixing ratio of rice and extract is desirably 80-100% : 0-20% such as 95 : 5.
