A method for forcing and harvesting chicory comprises the placing of chicory roots having tops in the initial development stage into forcing trays. The tops are forced to develop into chicory heads under controlled conditions, after which the heads are separated from the roots by means of a cutting element or the like. The chicory roots are placed into the forcing trays with the upper side of the root abutting against the bottom side of a separating element, so that the head grows through a passage in said separating element. When harvesting takes place, the head is separated from the root at the level of the separating element. The invention furthermore includes a device for carrying out this method.
