PURPOSE: A method for producing powdered persimmon vinegar made from the concentrate of vinegar and the extract of persimmon leaves is provided to serve powdered persimmon vinegar with improved flavor and removed sour taste. CONSTITUTION: The method includes the following steps of: (i) concentrating persimmon vinegar to 12-18brix with a vacuum concentrator; (ii) adding 15-30wt% of extract of persimmon leaves and 5-9wt% of Cyclodextrin to the concentrate, by the weight of the concentrate and stirring the mixture at 0-30deg.C for 30-180min; (iii) dissolving 1-5wt% of lactose, 25-35wt% of maltodextrin and 5-9wt% of gum in the stirred solution and homogenizing the mixed solution at 0-30deg.C for 2-10min; and (iv) spray-drying the homogenized solution into powdered persimmon vinegar. |
