PROBLEM TO BE SOLVED: To provide a method for easily culturing Lyophyllum aggregatum mushroom having excellent postures in a large amount, and to provide a plumule-removing device used on the culture of the Lyophyllum aggregatum mushroom. SOLUTION: This method for culturing the Lyophyllum aggregatum mushroom comprises finishing the culture of the spores of a spawn inoculated in a culture medium 2 in a culture bottom 1, pressing the outer peripheral portion 32 of the spawn layer 3 except its central portion 31 in a bottle mouth 4 to remove killed pellicles in the bottle mouth 4, further culturing the spawn to germinate the plumules 6/6a of fruit bodies 6L and then removing all of the peripheral plumules 6a, while leaving the plumules (3 for harvest in an area having a diameter of 4 mm to 9 mm in the central portion of the plumules 6/6a germinated in the central portion 31 in the bottom mouth 4. A removing device 7 for removing the plumules 6a comprises a cylinder 8 capable of being lifted toward the center of the culture medium 2 in the mouth 4 of the turned culture bottle 1 and removing blades 9 which are synchronously lifted with the cylinder 8 and rotated around the cylinder 8 to remove the plumules 6a on the periphery of the cylinder 8.
