PURPOSE: An apparatus for aging soybean sauces, one of a traditional food of Korea, capable of freely controlling a size of an aging tank to maintain an aging temperature substantially constant and freely discharging soybean from a discharge apparatus constructed at the bottom of the aging tank is provided, which makes it possible to give a product having uniform quality by aging at a constant temperature in all seasons and is easy to clean. CONSTITUTION: A soybean is transferred to a cooler(22) through a screw conveyor(20') and a belt conveyor(21) constructed at the lower part of a steam tank(20) for steaming a soybean at 105deg.C and then to a soybean silo(23). The soybean is mixed with malted rice and salt in a mixer(25) and then supplied to an aging tank(3) of an aging apparatus(1). The aging apparatus comprises the aging tank in vertical attitude containing a directional plate(5)(6) at specified intervals in its inside, a connecting device(8) and a discharge slot at the lower side; and a discharge apparatus(2) containing a butterfly valve at the center, a right screw connected to a motor and a light screw for discharging contents. |
