PURPOSE: Provided is a method of making corn noodle by mixing corn powder, salt and water, making dough and extruding. The corn noodle is low cost, having also characteristic smooth and chewy texture, specific color, flavor and taste. CONSTITUTION: The noodle comprises: making step of dough by mixing 70-85wt.% of corn powder from its grain without the covering layer, 5-15wt.% of the corn starch from the grain without germ, 2-10wt.% of salt and 2-10wt.% of water; making step of noodle strings by extruding the above dough through noodle extruding mold with the pipes heated at 130-150deg.C and sterilizing; and drying the noodle strings at 4-10deg.C for 10-20 minutes and vacuum packing. |
