PURPOSE: Provided is a manufacturing method of fermented soy bean paste to prevent over-denaturation or insufficient denaturation and to give excellent flavor and taste. CONSTITUTION: The manufacturing method of fermented soy bean paste comprises the steps of: washing and dipping soy beans; boiling the prepared soybeans; cooling the boiled soy beans; drying the cooled soy beans to obtain boiled-dried soy beans; soaking them in hot water; mixing the soaked soy beans with wheat malt, refined salts and purified water; crushing the mixture; and aging it. |
