MICROORGANISM CAPABLE OF PRODUCING FRUCTOSYL TRANSFERASE AND METHOD FOR PRODUCING FRUCTOOLIGOSACCHARIDE AND NEOFRUCTOOLIGOSACCHARIDE USING THE SAME

PURPOSE: A microorganism capable of producing fructosyl transferase and a method for producing fructooligosaccharide and neofructooligosaccharide using the same are provided, to cheaply produce the fructooligosaccharide in higher yield. CONSTITUTION: The microorganism Penicillium citrinum(KCTC 18080P) derived from the soil is capable of producing fructosyl transferase, thereby decomposing sucrose into fructooligosaccharide of formula(1) and neofructooligosaccharide of formula(2), wherein G is glucose and F is fructose. The method for producing fructooligosaccharide and neofructooligosaccharide comprises the steps of: (a) culturing Penicillium citrinum(KCTC 19080P) in a first seed medium at 26 to 28 deg. C and 100 to 200 rpm for 2 days; (b) inoculating the seed cultured medium into a fermentation medium under conditions of 26 to 28 deg. C of temperature, 200 to 500 rpm of agitation speed and 0.5 to 1 v/vm of air supplying rate for 72 hours; and (c) centrifuging the cultured medium to recover a cell pellet, washing it with 0.85% saline solution two times, and culturing the cell pellet in a medium containing 60 to 70 Brix of sucrose under conditions of 35 to 50 deg. C, 100 to 300 rpm and pH 4 to 7 for 20 to 50 hours.
