PURPOSE: Provided is a manufacturing method of undistilled soy sauce using licorice root, thereby providing the undistilled soy sauce having savory taste and flavor of licorice roots. CONSTITUTION: The manufacturing method of undistilled soy sauce using licorice root comprises the steps of: steaming defatted soybeans; roasting and pulverizing wheat; mixing them together in a ratio of 1:1: inoculating 1 part by weight of the spore of Aspergillus Oryzae or Aspergillus Sojae, into 1400 part by weight of the mixture; injecting saline water into the mixture to its salinity being 22% and fermenting at high temperature or low temperature; and concentrating it, wherein the saline water is added with 5-10 wt.% of licorice root extract referred to 100 wt.% of the saline water. |
