摘要 PURPOSE: A method of making instant sweet red-bean soup(danpatchuk) with rice dumplings by packaging precooked red-bean powder and rice dumplings in an air-tight sealing conditions is provided. The product enables a consumer to eat directly by immersing it in hot water while maintaining characteristic taste, texture, flavor and appearance of danpatchuk. CONSTITUTION: The ready-to-eat sweet red-bean soup with rice dumplings comprises 16% by weight of red-bean powder(12), 65% by weight of rice dumplings(14) and 19% by weight of a seasoning material containing sugar and salt. The red-bean powder is prepared by soaking a red-bean in water for 1 to 3hr, heating 2 times with water for 1hr at 100deg.C, filtering with a sieve of 200 meshes and then drying. The rice dumplings are prepared by mixing glutinous rice flour and regular rice flour in a ratio of 6:4, kneading with water and then forming into a ball with a diameter of 1 to 2cm.
