An oil and water separator with a tank and a separating chamber enclosed by the side walls and partitions forming dams across the line of flow of the fluid through the tank, has a cover for the separator chamber fixed to the side walls and to some of the partitions, together with a series of baffle plates arranged in "V"'s between two of the partitions. The top baffle plate is a closed "V" whilst the others are open forming a vertical flow between their inclined legs, and all are fixed at their extremities to the partitions leaving a space between their long edges and the tank side walls forming lateral flow channels. Increased efficiency with a smaller separating tank. "V"-form baffle plates increase the effective separator surface area.
