1348290 Emulsified oil dressings KRAFTCO CORP 19 Aug 1971 [24 Aug 1970] 38996/ 71 Headings A2B and A2D An emulsified oil dressing composition comprises a bacteriological nutrient medium present in less than 1 % by weight of the composition, edible oil, moisture, an emulsifying agent and an edible acid, the acid being present at a level of less than 2% equivalent acetic acid by weight based on the level of moisture. The composition is stable against bacterial growth. The bacteriological nutrient medium preferably comprises carbohydrate material. Suitable emulsifying agents are starch, vegetable gums or seeweed gums. Preservatives and artificial sweetening agents may be incorporated in the composition. The edible oil is a vegetable oil such as cottonseed oil, and the edible acid is preferably acetic acid. The composition is exemplified in the form of mayonaisse, salad dressing and French dressing compositions. |
