<p>Milk prods. such as yoghurt, kefir and other food, produced by fermentation and, if thickeners are added, by concn. are conveyed continuously through a treatment tunnel on an endless belt. The tunnel includes a heating chamber, a neutral and partly uncovered zone, and a cooling zone. This continuous process requires less floor space for the same hourly prodn. rate than a discontinuous plant. It requires less labour and less heating power and the prodn. costs are thus lower.</p> |
